Copycat Arby's Curly Fries

Spiralized russet potatoes in an Arby's-style seasoned batter — smoked paprika, garlic and onion powder, and a little cayenne — air fried until crisp outside and tender inside.

  • 2 pounds russet potatoes, peeled if desired
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 1/2 teaspoons salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • Cooking spray, for coating

Directions

  1. 1. Trim ends of potatoes so they will stay in place in a spiralizer. Cut potatoes into curls with the largest noodle plate of the spiralizer. Place potato curls in a large bowl. Add enough hot tap water to cover. Let stand for 20 minutes.
  2. 2. Preheat the air fryer to 375 degrees F (190 degrees C). Place a wire rack over a parchment-lined rimmed baking sheet.
  3. 3. Drain potato curls; blot potato curls dry with paper towels.
  4. 4. Whisk together 1/2 cup milk, flour, 1/4 cup cornstarch, 1 1/2 teaspoons salt, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/4 teaspoon cayenne pepper in a large bowl.
  5. 5. Add potato curls to bowl; toss in batter to coat. Place on the wire rack to drain excess batter.
  6. 6. Place potato curls in the air fryer, working in batches. Coat generously with cooking spray.
  7. 7. Bake until crisp and golden brown, 9 to 10 minutes, turning once. Serve immediately.

Notes

Add 20 minutes of standing time while the potato curls soak, so plan on about 45 minutes start to finish. Yield is 8 servings. Needs a spiralizer with a large noodle plate, and an air fryer. Work in batches so the curls are not crowded, and serve them straight away — they soften as they sit. The page omits cooking spray from its ingredient list even though the second-to-last step calls for coating the curls generously with it.
