Millionaire Bars

Shortbread, caramel, and chocolate. A rich British bar cookie (also called millionaire shortbread): a thick pressed shortbread crust, a soft condensed-milk caramel, and a firm bittersweet chocolate top finished with flaky salt.

Ingredients

For the shortbread

  • Cooking spray
  • 1 1/2 cups all-purpose flour (200 g)
  • 2 sticks unsalted butter, chilled (8 ounces or 226 g)
  • 1 cup powdered sugar (114 g)
  • 1/2 teaspoon kosher salt

For the layers

  • 1 can sweetened condensed milk (14 ounces)
  • 2 tablespoons light corn syrup
  • 4 tablespoons unsalted butter (2 ounces or 57 g)
  • 1 teaspoon vanilla extract
  • 8 ounces bittersweet chocolate, roughly chopped
  • Flaky salt, for sprinkling

Directions

  1. 1. Preheat the oven to 350°F.
  2. 2. Line an 8x8-inch baking dish with parchment paper and spray with cooking spray.

Make the shortbread

  1. 1. Pulse the flour, butter, powdered sugar, and salt in a food processor or cut together in a bowl with a pastry blender until the mixture resembles moist sand.
  2. 2. Firmly press the mixture into the bottom of the prepared pan to form an even layer.

Bake the crust

  1. 1. Bake until the shortbread appears slightly glossy with a toasted color, 20 to 30 minutes. Cool the shortbread layer on the countertop, at least 30 minutes, or in the refrigerator.

Make the caramel

  1. 1. Once the shortbread has cooled, make the caramel layer. In a medium saucepan over medium-low heat, combine the sweetened condensed milk, corn syrup, and butter. Constantly whisk until the mixture reaches 220 to 225°F on an instant-read thermometer, always cooking over medium-low heat, about 15 minutes. It should be light golden brown.
  2. 2. Remove from heat and stir in the vanilla. Pour the caramel on top of the shortbread, using a rubber or offset spatula to smooth it into an even layer. Cool in the fridge until set, about 30 minutes.

Top with chocolate

  1. 1. Melt the chocolate in a double boiler or in 20-second bursts in the microwave, stirring often.
  2. 2. Pour the melted chocolate over the caramel layer, and use an offset spatula to smooth before sprinkling with flaky salt. Chill the millionaire bars in the fridge until set, at least 30 minutes, before slicing with a large knife. Clean your knife between slices to ensure the most uniform bars.

Storage

  1. 1. Refrigerate in an airtight container for up to 1 week, or freeze individually wrapped bars for up to 6 months.

Notes

Cooling time is 1 hr 30 min on top of the 1 hr of active time, so plan for about 2 hr 30 min start to finish. Yield is 24 bars from an 8x8-inch pan. Tips from the recipe: line the pan with parchment and let the edges hang over the sides so the slab lifts straight out. Do not skip the flaky salt on top — it is what makes the other flavors pop. Let each layer cool fully before adding the next, and chill the whole thing before slicing. Other toppings work too, like sliced almonds or a swirl of white chocolate. Keeping the caramel over medium-low heat and whisking constantly is what stops it scorching or clumping.
